Ingredients

Beef Topping

  • 2 tsp sugar
  • 1 tbsp mirin
  • 1 tbsp sake
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1 piece ginger, thinly sliced
  • 250 g beef, thinly sliced

Udon Noodle Soup

  • 2 cups dashi stock
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1 pinch salt
  • 2 portion udon noodles
  • 6 slices naruto
  • 2 tsp finely chopped scallions

Instructions

  1. Prepare the beef topping by mixing soy sauce, mirin, sake, sugar, and water in a bowl.
  2. Heat oil in a frying pan, add ginger until fragrant, then add the thinly sliced beef.
  3. Once the beef changes color, add the sauce mixture and simmer for about 5 minutes.
  4. For the udon soup, combine dashi stock, mirin, soy sauce, sugar, and salt in a pot and bring to a boil.
  5. In a large pot, boil water and cook the udon noodles until done, then drain.
  6. Place the cooked noodles in a serving bowl, pour the udon soup stock over them, and top with the beef, naruto, and scallions.
