Udon Noodles

Ingredients

The dough

  • 300 g all purpose flour
  • 140 ml water
  • 15 g salt
  • generous amount corn or potato starch

Soy sauce dipping sauce

  • ¼ cup dashi stock
  • 1 tbsp soy sauce
  • 1 tbsp mirin

Sesame seed dipping sauce

  • ¼ cup sesame seeds
  • ¼ cup dashi stock
  • 1 tbsp soy sauce
  • 1 tbsp mirin

Instructions

  1. Dissolve salt in water.
  2. Combine flour with salty water gradually to form a crumbly texture.
  3. Knead the mixture into a large bowl-shaped dough.
  4. Place the dough in a ziplock bag and seal it.
  5. Knead by stepping on the dough 50 times, then fold and repeat two more times.
  6. Let the dough rest for at least 3 hours.
  7. Roll out the dough to 3mm thick and cut into 3mm wide strips.
  8. Boil water and cook the noodles for 10 to 12 minutes.
  9. Drain the noodles and rinse under running water.
  10. Serve with dipping sauces and yakumi.
