Ingredients

The noodles

  • 2 servings udon noodles

The broth

  • 2 cups dashi stock
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tsp sugar

Optional toppings

  • 1 tbsp finely chopped scallions
  • 2 tsp grated ginger

Instructions

  1. Cook the udon noodles in boiling water for 2-3 minutes, then drain and place in serving bowls.
  2. In a saucepan, combine dashi stock, soy sauce, mirin, and sugar, and bring to a boil.
  3. Pour the hot broth over the cooked udon noodles and garnish with optional toppings.
