Ingredients

Inari Age

  • 2 pieces Aburaage (deep-fried tofu)
  • ¾ cup water
  • 1 tbsp soy sauce
  • 2 tbsp sugar

Udon Soup

  • 2 pieces Udon noodles
  • 8 cups water
  • 2 cups Dashi stock
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 4 slices Naruto fish cake
  • 1 tbsp chopped scallions
  • pinch Shichimi togarashi (optional)

Instructions

  1. Prepare the Inari Age by pouring boiling water over the deep-fried tofu and squeezing out excess moisture.
  2. Simmer the tofu in a mixture of water, soy sauce, and sugar for 15 minutes.
  3. Boil 8 cups of water in a large pot and prepare the udon soup in a separate saucepan with dashi, soy sauce, and mirin.
  4. Cook the udon noodles in boiling water for 1 minute, then drain.
  5. Serve the udon noodles in a bowl, top with the seasoned tofu and Naruto, and garnish with scallions and Shichimi togarashi.
