Ingredients

Main Ingredients

  • 1 lb yellow noodles
  • 4 pieces squid
  • 2 large eggs
  • 1 cup bean sprouts
  • 1 potato boiled, peeled, and sliced
  • 3 pieces fried bean curd or fried firm tofu
  • 2 cloves garlic
  • 1 lime cut into wedges
  • lettuce leaves sliced, for garnishing
  • tablespoons cooking oil

Chili Paste

  • 10 pieces dried red chilies
  • tablespoons cooking oil
  • 1 tablespoon water

Sauce

  • 2 tablespoons soy sauce
  • 2 tablespoons dark soy sauce or kecap manis
  • 3 tablespoons tomato ketchup
  • to taste sugar

Instructions

  1. Blend the ingredients for the chili paste using a food processor.
  2. Heat a wok, add the chili paste, and stir-fry until the oil separates. Set aside.
  3. Combine all ingredients for the sauce in a small bowl and set aside.
  4. In a hot wok, add cooking oil, garlic, chili paste, potatoes, bean curd, and squid. Stir-fry until fragrant.
  5. Add the yellow noodles and sauce, stir and push noodles to the side.
  6. Add remaining cooking oil, crack eggs on top, scramble, and mix with noodles.
  7. Add bean sprouts and stir quickly for about 1 minute.
  8. Serve garnished with lettuce and lime wedges, squeezing lime juice over the noodles.
