Instructions
- Blend the ingredients for the chili paste using a food processor.
- Heat a wok, add the chili paste, and stir-fry until the oil separates. Set aside.
- Combine all ingredients for the sauce in a small bowl and set aside.
- In a hot wok, add cooking oil, garlic, chili paste, potatoes, bean curd, and squid. Stir-fry until fragrant.
- Add the yellow noodles and sauce, stir and push noodles to the side.
- Add remaining cooking oil, crack eggs on top, scramble, and mix with noodles.
- Add bean sprouts and stir quickly for about 1 minute.
- Serve garnished with lettuce and lime wedges, squeezing lime juice over the noodles.
