Ingredients

The rice and flavoring

  • 1 clove shallot
  • 1 clove garlic
  • 1 red chili red chili, seeded
  • ½ teaspoon toasted belacan or terasi
  • ½ teaspoon palm sugar
  • ½ tablespoon kecap manis
  • 8 oz overnight rice

The toppings and cooking oil

  • 1 fried egg fried egg, well done
  • 2 tablespoons oil

Instructions

  1. Break up the leftover rice to prevent clumping.
  2. Toast the belacan in a wok over low heat until dry and aromatic.
  3. Fry an egg until well-done and set aside.
  4. Blend the shallot, garlic, red chili, and toasted belacan into a paste.
  5. Heat oil in a wok and stir-fry the blended paste until aromatic.
  6. Add the rice to the wok and mix well with the flavoring paste.
  7. Stir in kecap manis and palm sugar, and continue to stir-fry until well blended.
  8. Serve the nasi goreng topped with the fried egg.
