Ingredients

Sweet Tamari Soy Sauce

  • 3 tbsp tamari sauce (gluten free) or coconut aminos
  • 2–3 tbsp molasses
  • 1 tbsp water

Spicy Mix-ins

  • 2 long red chilies, thinly sliced
  • 3 cloves garlic
  • 1 small shallot (sliced) or ⅓ cup diced red onion
  • a pinch ground ginger

Carrot Rice Nasi Goreng

  • 2 tbsp oil (sesame or avocado)
  • 5 large eggs
  • 8 oz pre-cooked sausage (chicken or any type)
  • 4 large carrots (riced)
  • ½ cup finely diced broccoli
  • 1 cup bean sprouts
  • 1 tbsp sweet soy sauce
  • to taste kosher salt and pepper
  • to garnish cilantro
  • optional Asian chili sauce, sesame seeds

Instructions

  1. Prepare the sweet tamari soy sauce by boiling tamari, molasses, and water, then set aside.
  2. Mix the spicy mix-in ingredients together and set aside.
  3. Rice the carrots and finely dice the broccoli.
  4. Heat oil in a large frying pan or wok and stir fry the spicy mix-in vegetables until fragrant.
  5. Add the minced sausage and stir fry until cooked through.
  6. Crack 2 eggs into the pan and fry for 2 minutes, then mix in the carrot rice, broccoli, and bean sprouts.
  7. Add the sweet soy sauce, salt, and pepper, and cook until everything is combined.
  8. Divide the mixture into serving bowls.
  9. Fry 3 additional eggs over-easy in the same pan and place one on top of each bowl.
  10. Garnish with cilantro and optional toppings.
