Instructions
- Prepare the sweet tamari soy sauce by boiling tamari, molasses, and water, then set aside.
- Mix the spicy mix-in ingredients together and set aside.
- Rice the carrots and finely dice the broccoli.
- Heat oil in a large frying pan or wok and stir fry the spicy mix-in vegetables until fragrant.
- Add the minced sausage and stir fry until cooked through.
- Crack 2 eggs into the pan and fry for 2 minutes, then mix in the carrot rice, broccoli, and bean sprouts.
- Add the sweet soy sauce, salt, and pepper, and cook until everything is combined.
- Divide the mixture into serving bowls.
- Fry 3 additional eggs over-easy in the same pan and place one on top of each bowl.
- Garnish with cilantro and optional toppings.
