Ingredients

  • 3 cups sliced mixed mushrooms

  • cups chickpeas
  • ¼ cup chopped cilantro
  • 2-3 tablespoons red curry paste
  • cups light coconut milk
  • cups veggie broth
  • 1 tablespoon fresh lime juice
  • 4 cups Asian style greens mix

Instructions

  1. Sauté the mushrooms, peppers, onion, garlic, and salt in a pot until soft.
  2. Add the chickpeas, cilantro, and curry paste, cooking until mixed well.
  3. Pour in the coconut milk, broth, and lime juice, bringing to a boil.
  4. Stir in the greens until wilted.
  5. Serve the soup.
