Salvadoran Pupusas

Ingredients

Dough

  • 2 cups masa harina corn flour
  • 1⅔ cups warm water
  • 1 tablespoon olive oil
  • ¾ teaspoon salt

Optional Fillings

  • ½–1 cup shredded cheese (Oaxacan, mozzarella, or jack)
  • ½–1 cup refried beans (black, pinto, or red)
  • 1 medium shallot, diced & sautéed
  • 1–2 tablespoons chopped cilantro
  • 1–2 pieces scallions, finely sliced

Salsa Roja Ingredients

  • 4 large roma tomatoes, quartered
  • ½ medium onion, rough chopped
  • 2 cloves garlic
  • 1–2 pieces jalapenos (or serranos), halved
  • ½ teaspoon oregano
  • 2–3 teaspoons salt
  • 2 tablespoons olive oil

Instructions

  1. Mix masa harina and salt in a bowl, then add warm water and olive oil to form a dough.
  2. Prepare your fillings, sautéing shallots until golden if using.
  3. Divide the dough into eight equal balls.
  4. Flatten each ball into a cup shape and add your desired filling.
  5. Fold the edges around the filling to encase it, then flatten into a disk about ½ inch thick.
  6. Heat oil in a skillet and cook each pupusa for 5-7 minutes on each side until golden and crispy.
  7. Keep warm in the oven until ready to serve.
