Ingredients

The loaf

  • 3 pieces eggs
  • 1 cup sugar
  • 1 cup full fat Greek yogurt
  • ½ cup melted coconut oil
  • 2 tbsp lemon zest
  • 3 tbsp lemon juice
  • 1 tsp vanilla extract
  • cups all purpose flour
  • 2 tsp baking powder
  • ½ tsp salt

The icing

  • 1 cup powdered sugar
  • 2-3 tbsp lemon juice

Instructions

  1. Preheat the oven to 350°F and grease a 9×5 loaf pan, optionally lining it with parchment paper.
  2. In a large bowl, whisk together the eggs and sugar, preferably using a hand mixer.
  3. Beat in the Greek yogurt, melted coconut oil, lemon zest, lemon juice, and vanilla until the mixture is creamy.
  4. In a separate medium bowl, mix the flour, baking powder, and salt.
  5. Gradually combine the dry ingredients with the wet mixture until fully incorporated.
  6. Pour the batter into the greased loaf pan.
  7. Bake for 45-50 minutes or until a toothpick inserted comes out clean. Allow to cool.
  8. While the loaf cools, whisk together the icing ingredients and pour over the cooled loaf.
