The icing

Instructions
- Preheat the oven to 350°F and grease a 9×5 loaf pan, optionally lining it with parchment paper.
- In a large bowl, whisk together the eggs and sugar, preferably using a hand mixer.
- Beat in the Greek yogurt, melted coconut oil, lemon zest, lemon juice, and vanilla until the mixture is creamy.
- In a separate medium bowl, mix the flour, baking powder, and salt.
- Gradually combine the dry ingredients with the wet mixture until fully incorporated.
- Pour the batter into the greased loaf pan.
- Bake for 45-50 minutes or until a toothpick inserted comes out clean. Allow to cool.
- While the loaf cools, whisk together the icing ingredients and pour over the cooled loaf.
