Instructions
- Preheat the oven to 350°F and grease a loaf pan.
- Whisk together the flour, baking powder, and salt in a medium bowl.
- In a large bowl, combine cane sugar and lemon zest, massaging the zest into the sugar.
- Add yogurt, olive oil, eggs, and vanilla to the sugar mixture and whisk until combined.
- Mix the dry ingredients into the wet ingredients until just combined.
- Fold in the blueberries gently.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 40 to 50 minutes until a toothpick comes out clean.
- Let the bread cool completely before removing from the pan and optionally glaze.
