Ingredients

The bread

  • cups all-purpose flour
  • 2 teaspoons baking powder
  • ¾ teaspoon sea salt
  • ½ cup cane sugar
  • 1 tablespoon lemon zest
  • ¾ cup whole milk Greek yogurt
  • ½ cup extra-virgin olive oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • cups blueberries

The glaze (optional)

  • powdered sugar to taste for glaze
  • fresh lemon juice to taste for glaze

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. In a large bowl, combine cane sugar and lemon zest, massaging the zest into the sugar.
  4. Add yogurt, olive oil, eggs, and vanilla to the sugar mixture and whisk until combined.
  5. Mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the blueberries gently.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 40 to 50 minutes until a toothpick comes out clean.
  9. Let the bread cool completely before removing from the pan and optionally glaze.
