Toby’s Tempeh Stir Fry

Ingredients

  • 2 tablespoons olive oil
  • 1 8-ounce package tempeh, sliced
  • 1 20-ounce bag frozen assorted stir-fry vegetables
  • to taste soy sauce

Instructions

  1. Heat 1 tablespoon of olive oil in a sauté pan and brown the sliced tempeh.
  2. Remove the tempeh from the pan and set it aside.
  3. In the same pan, add the frozen vegetables with the remaining tablespoon of olive oil and sauté while steaming with a covered lid.
  4. Once the vegetables are steamed, return the browned tempeh to the pan, add soy sauce to taste, and warm everything before serving.
