Sesame Ginger Tempeh Stir Fry

Ingredients

The stir fry

  • 1 block tempeh (8 oz)
  • 1 cup carrot sticks
  • 1 cup green beans
  • 2 tbsp olive oil

The sauce

  • 1 tbsp fresh grated ginger
  • 1 tbsp fresh garlic
  • 1 tbsp sesame oil
  • 1 tbsp rice wine vinegar
  • 3 tbsp soy sauce or coconut aminos
  • 2 tbsp maple syrup
  • to taste sesame seeds (optional)
  • to taste green onion (optional)
  • to serve white rice (optional)

Instructions

  1. 1. Slice the tempeh into ΒΌ inch thick cubes.
  2. 2. Heat a pan with olive oil and add the tempeh once hot.
  3. 3. Cook the tempeh for about 6 minutes, flipping occasionally until browned.
  4. 4. While cooking, whisk together the ginger, garlic, sesame oil, rice wine vinegar, soy sauce, and maple syrup in a bowl.
  5. 5. Add half of the sauce to the pan with the tempeh until coated, then remove the tempeh and place it in a bowl.
  6. 6. Add the veggies and the remaining sauce to the pan and cook for about 5 minutes until the veggies start to soften.
  7. 7. Add the tempeh back into the pan and cook for an additional 3-5 minutes until everything is cooked through.
  8. 8. Serve with white basmati rice or your choice of starch.
