Sesame Ginger Tempeh Stir Fry

Instructions
- 1. Slice the tempeh into ΒΌ inch thick cubes.
- 2. Heat a pan with olive oil and add the tempeh once hot.
- 3. Cook the tempeh for about 6 minutes, flipping occasionally until browned.
- 4. While cooking, whisk together the ginger, garlic, sesame oil, rice wine vinegar, soy sauce, and maple syrup in a bowl.
- 5. Add half of the sauce to the pan with the tempeh until coated, then remove the tempeh and place it in a bowl.
- 6. Add the veggies and the remaining sauce to the pan and cook for about 5 minutes until the veggies start to soften.
- 7. Add the tempeh back into the pan and cook for an additional 3-5 minutes until everything is cooked through.
- 8. Serve with white basmati rice or your choice of starch.
