Instructions
- Whisk together all the sesame ginger sauce ingredients in a small bowl.
- Heat olive oil in a large skillet over medium heat.
- Add shredded carrots, diced red pepper, and diced snow peas to the skillet and cook for 3 minutes, stirring occasionally.
- Add crumbled tempeh and continue cooking for another 3 minutes.
- Pour in the sesame ginger sauce and stir until combined, cooking until the sauce thickens (7-10 minutes).
- Let the mixture cool slightly before spooning it into lettuce cups.
- Garnish with diced cashews and green onions if desired.
