Sesame Ginger Tempeh Lettuce Wraps

Ingredients

The sesame ginger sauce

  • ¼ cup water
  • ¼ cup tamari
  • 3 tablespoons maple syrup
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon additional toasted sesame oil
  • 1 teaspoon fresh grated ginger
  • 1 clove grated garlic
  • 1 teaspoon cornstarch

The lettuce wraps

  • 1 teaspoon olive oil
  • 1 cup shredded carrots
  • 1 cup diced red pepper
  • 1 cup diced snow peas
  • 7 oz crumbled tempeh
  • 6-8 pieces large lettuce leaves (such as romaine or butter)

Optional garnishes

  • to taste diced cashews
  • to taste green onions

Instructions

  1. Whisk together all the sesame ginger sauce ingredients in a small bowl.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add shredded carrots, diced red pepper, and diced snow peas to the skillet and cook for 3 minutes, stirring occasionally.
  4. Add crumbled tempeh and continue cooking for another 3 minutes.
  5. Pour in the sesame ginger sauce and stir until combined, cooking until the sauce thickens (7-10 minutes).
  6. Let the mixture cool slightly before spooning it into lettuce cups.
  7. Garnish with diced cashews and green onions if desired.
