Ingredients

The stew

  • 1 pound dried Christmas Lima beans
  • 16 tablespoons extra virgin olive oil
  • 2 large heads celery
  • 3 bunches scallions
  • 8 cloves garlic
  • scant 2 teaspoons caraway seeds
  • 2 teaspoons celery salt
  • 1 28-ounce can whole plum tomatoes
  • 5 ½ cups water or broth

Toppings

  • to taste oily black olives
  • 1 lemon cut into wedges

Instructions

  1. Cook the dried beans if not using canned.
  2. Heat olive oil in a large pot over medium-high heat.
  3. Add celery and stir to coat with oil, cooking for 10 minutes.
  4. Add scallions, garlic, caraway seeds, and salt, cooking for another 10-15 minutes until softened.
  5. Stir in tomatoes and celery salt, cooking for a few more minutes.
  6. Add beans and liquid, bringing to a simmer.
  7. Taste and adjust seasoning if necessary.
  8. Serve topped with chopped olives and lemon wedges.
