Instructions
- Combine maple syrup and water in a saucepan over medium heat and stir until dissolved.
- Turn off heat, stir in fresh rosemary, and let steep for one hour before straining.
- Fill a cocktail shaker with ice and add gin, pomegranate juice, grapefruit juice, maple rosemary syrup, and grapefruit bitters.
- Shake vigorously for about 30 seconds.
- Fill two cocktail glasses with crushed ice and strain the mixture into the glasses.
- Top each drink with sparkling wine and garnish with a sprig of rosemary.
- Serve immediately.
