Easy Potato Salad

Ingredients

The salad

  • 3 pounds potatoes, peeled and cut into ¾-inch chunks
  • 1 cup onion, minced (about ½ medium onion)
  • 2 ribs celery, thinly sliced
  • 6 large hard-boiled eggs, peeled and chopped
  • paprika for garnish

The dressing

  • cups mayonnaise
  • 2 tablespoons granulated sugar
  • 2 tablespoons white vinegar
  • 1 tablespoon yellow mustard
  • 1 teaspoon garlic powder
  • 1 tablespoon salt
  • ¾ teaspoon black pepper

Instructions

  1. Boil potatoes with salt until tender, about 10 minutes, then drain and cool slightly.
  2. In a small bowl, whisk together mayonnaise, sugar, vinegar, mustard, and garlic powder.
  3. In a large bowl, combine potatoes, onion, celery, and chopped eggs.
  4. Add the mayonnaise mixture and stir to combine.
  5. Season to taste with additional salt and pepper, and garnish with paprika.
