Cranberry Chocolate Biscotti

Instructions
- Blend honey and egg in a large bowl using a hand blender.
- In a separate bowl, mix almond flour, salt, and baking soda.
- Combine the dry ingredients with the wet ingredients and stir until mixed.
- Fold in chocolate chips, cranberries, and pecans.
- Shape the dough into 4 logs, each 5 inches long and 3 inches wide, on a parchment-lined baking sheet.
- Bake in a preheated oven at 350°F for 20 minutes.
- Remove from the oven and let cool for 2 hours.
- Transfer the logs to a cutting board and slice them diagonally into ½ inch pieces.
- Place the slices back on a parchment-lined baking sheet.
- Bake for an additional 6 minutes, flip the slices, and bake for another 6 minutes.
- Let the biscotti cool until crunchy, about 20 minutes, before serving.
