Cranberry Orange Biscotti

Ingredients

  • cups blanched almond flour
  • 1 tablespoon arrowroot powder
  • ¼ teaspoon celtic sea salt
  • ¼ teaspoon baking soda
  • ¼ cup agave nectar or honey
  • 2 teaspoons orange zest
  • ¼ cup dried cranberries
  • ¼ cup pistachios

Instructions

  1. Combine almond flour, arrowroot powder, salt, and baking soda in a food processor.
  2. Pulse until well combined.
  3. Add agave nectar and orange zest, and pulse until a dough forms.
  4. Transfer dough to a surface and mix in cranberries and pistachios by hand.
  5. Shape the dough into two logs on a parchment-lined baking sheet.
  6. Bake at 350°F for 15 minutes, then cool for 1 hour.
  7. Slice the logs diagonally into ½ inch pieces.
  8. Spread the slices on a baking sheet and bake at 300°F for 12-15 minutes.
  9. Allow to cool completely to become crispy.
