Cranberry Pistachio Biscotti

Instructions
- Preheat the oven to 350°F.
- Mix flour, baking powder, and salt in a small bowl and set aside.
- In a large bowl, lightly beat the eggs and gradually add sugar.
- Slowly add oil and beat until the mixture is light yellow, about 1-2 minutes.
- Combine the flour mixture with the egg mixture until just blended.
- Fold in the pistachios and craisins.
- If the dough is too dry, add ½ teaspoon of vegetable oil.
- Form the dough into a log on a cookie sheet, about 1 inch thick and 3 inches wide.
- Bake for 25-30 minutes until golden brown.
- Allow to cool for 10 minutes before slicing into ½ inch slices.
- Place the slices on their sides and return to the oven.
- Bake for an additional 10-12 minutes until golden brown, then cool on a rack.
