Ingredients

The dough

  • 1 ⅔ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon sea salt
  • 2 large eggs
  • cup sugar
  • 2 tablespoons oil

Add-ins

  • cup pistachios, chopped
  • cup craisins

Instructions

  1. Preheat the oven to 350°F.
  2. Mix flour, baking powder, and salt in a small bowl and set aside.
  3. In a large bowl, lightly beat the eggs and gradually add sugar.
  4. Slowly add oil and beat until the mixture is light yellow, about 1-2 minutes.
  5. Combine the flour mixture with the egg mixture until just blended.
  6. Fold in the pistachios and craisins.
  7. If the dough is too dry, add ½ teaspoon of vegetable oil.
  8. Form the dough into a log on a cookie sheet, about 1 inch thick and 3 inches wide.
  9. Bake for 25-30 minutes until golden brown.
  10. Allow to cool for 10 minutes before slicing into ½ inch slices.
  11. Place the slices on their sides and return to the oven.
  12. Bake for an additional 10-12 minutes until golden brown, then cool on a rack.
