Pistachio Turmeric Rice Power Bowl

Instructions
- Heat olive oil in a medium pot and sauté rice, ginger, garlic, turmeric, and black pepper for 2 minutes.
- Add water, vegetable bullion, and agave syrup, stir well, cover, and cook over medium heat for about 40 minutes until rice is tender.
- Stir in lemon juice and remove from heat.
- Divide turmeric rice into 4 bowls, about ½ cup per serving.
- Top each bowl with 2 cups of spinach, ⅓ cup chickpeas, ¼ avocado, 2 tablespoons pistachios, and 2 tablespoons cranberries.
- Drizzle each bowl with ½ teaspoon olive oil and 1 teaspoon lemon juice.
- Serve immediately.
