Protein Power Goddess Bowl

Ingredients

The base

  • 2 cups uncooked brown rice
  • 1.5-2 cups uncooked lentils

The vegetables

  • ½ unit red onion
  • 4 cloves garlic
  • 1 unit red/yellow/orange pepper
  • 1 unit tomato
  • 2 large handfuls mixed greens (or spinach)
  • ½ cup parsley

The dressing and extras

  • 1 cup Tahini lemon garlic dressing
  • 8-10 units sundried tomatoes (optional)
  • 1/2 tbsp olive oil
  • to taste unit Kosher salt
  • to taste unit pepper
  • to taste unit lemon wedges (for garnish)
  • to taste unit olives (for garnish)

Instructions

  1. Cook lentils and rice according to package directions, rinse with cold water, strain, and set aside.
  2. In a large skillet, heat olive oil over low-medium temperature.
  3. Add onion, garlic, red pepper, salt, pepper, and optional sundried tomatoes to the skillet and sauté for about 5 minutes.
  4. Stir in the cooked, drained, and rinsed lentils and cook for a few more minutes.
  5. Add the tahini lemon garlic dressing and stir well, cooking until it starts to bubble.
  6. Remove from heat and stir in the mixed greens and parsley.
  7. Portion the cooked brown rice into bowls and scoop the sautéed lentil mixture over the rice.
  8. Garnish with olives and a lemon wedge if preferred.
