Instructions
- Cook lentils and rice according to package directions, rinse with cold water, strain, and set aside.
- In a large skillet, heat olive oil over low-medium temperature.
- Add onion, garlic, red pepper, salt, pepper, and optional sundried tomatoes to the skillet and sauté for about 5 minutes.
- Stir in the cooked, drained, and rinsed lentils and cook for a few more minutes.
- Add the tahini lemon garlic dressing and stir well, cooking until it starts to bubble.
- Remove from heat and stir in the mixed greens and parsley.
- Portion the cooked brown rice into bowls and scoop the sautéed lentil mixture over the rice.
- Garnish with olives and a lemon wedge if preferred.
