Ingredients

The base

  • 2 cups beans
  • 2 cups brown rice
  • 4 cups veggie broth
  • 1 bunch kale, swiss chard, or spinach
  • 2 spring onions spring onions
  • 24 ounces purple potatoes
  • 1 each avocado
  • to taste lemon pepper

For roasting

  • to taste veggie broth or oil

BBQ Tahini Sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the potatoes into small wedges, drizzle with veggie broth or oil, and season with salt and lemon pepper.
  3. Bake the potatoes on a parchment-lined cookie sheet for 20-25 minutes until crispy.
  4. Wash and coarsely chop the kale, chard, or spinach, and chop the spring onions.
  5. Sauté the greens and spring onions in a large pan with a little veggie broth or oil until just wilted.
  6. Cook the rice according to package directions using veggie broth or water.
  7. Cook the beans according to package directions if they are not already cooked.
  8. Prepare the BBQ Tahini Sauce according to the recipe.
  9. Assemble the bowl by placing all ingredients side by side in a bowl and adding about ¼ cup of BBQ Tahini Sauce in the center.
