Ingredients

The base

  • 2 cups quinoa
  • 1 cup brown rice (optional)
  • 3 cups veggie broth
  • 2 cans black beans
  • 1 bunch kale (chopped)
  • 2 cups sliced mushrooms
  • ½ of a red onion chopped

For sautéing

  • as needed none veggie broth or oil

For miso sauce

  • 4 tablespoons chickpea miso
  • 1 tablespoon sesame oil
  • 2 tablespoons rice vinegar
  • ½ teaspoon fresh chopped garlic
  • ½ cup water

Optional toppings

  • as needed none hot sauce

Instructions

  1. Rinse and cook the quinoa and brown rice using veggie broth or water.
  2. Wash and clean the beans and vegetables, then chop the vegetables.
  3. Sauté the mushrooms and red onion in oil or broth over medium heat until just cooked.
  4. Steam the kale for 1-2 minutes until bright green, then remove from heat.
  5. Prepare the miso sauce by blending all sauce ingredients until smooth.
  6. Assemble the ingredients in a bowl and drizzle with miso sauce and hot sauce if desired.
