Instructions
- Rinse and cook the quinoa and brown rice using veggie broth or water.
- Wash and clean the beans and vegetables, then chop the vegetables.
- Sauté the mushrooms and red onion in oil or broth over medium heat until just cooked.
- Steam the kale for 1-2 minutes until bright green, then remove from heat.
- Prepare the miso sauce by blending all sauce ingredients until smooth.
- Assemble the ingredients in a bowl and drizzle with miso sauce and hot sauce if desired.
