Ingredients

The cake

  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 4 tablespoons unsalted butter
  • cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk
  • cups blackberries

For serving

  • Whipped cream

Instructions

  1. Preheat the oven to 400°F (204°C) and prepare a 9" round pan with parchment paper and butter.
  2. Sift and whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. Beat the butter and ⅔ cup of sugar until light and fluffy, then add the egg and vanilla extract.
  4. Mix in the buttermilk and dry ingredients in three alternating batches, being careful not to overmix.
  5. Gently fold in the dry ingredients until just blended, then pour the mixture into the prepared pan.
  6. Scatter the blackberries over the batter and lightly press them in, then sprinkle the remaining sugar on top.
  7. Bake for 30-35 minutes until a cake tester comes out clean, then let it cool for 10 minutes before removing from the pan.
