Instructions
- Preheat the oven to 400°F (204°C) and prepare a 9" round pan with parchment paper and butter.
- Sift and whisk together the flour, baking powder, baking soda, and salt in a bowl.
- Beat the butter and ⅔ cup of sugar until light and fluffy, then add the egg and vanilla extract.
- Mix in the buttermilk and dry ingredients in three alternating batches, being careful not to overmix.
- Gently fold in the dry ingredients until just blended, then pour the mixture into the prepared pan.
- Scatter the blackberries over the batter and lightly press them in, then sprinkle the remaining sugar on top.
- Bake for 30-35 minutes until a cake tester comes out clean, then let it cool for 10 minutes before removing from the pan.
