Ingredients

Streusel Topping

  • ¼ cup all-purpose flour
  • ¼ cup brown sugar
  • 2 Tbsp softened butter
  • ½ tsp cinnamon

Coffee Cake

  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • ¾ tsp baking soda
  • ¼ tsp salt
  • ½ cup white sugar
  • 2 large eggs
  • 1 cup buttermilk
  • ¼ cup melted butter
  • ½ cup blueberries (frozen or fresh)

Instructions

  1. Preheat the oven to 350ºF.
  2. Combine the streusel topping ingredients in a small bowl until crumbly and set aside.
  3. In a large bowl, mix the dry ingredients for the coffee cake.
  4. In a separate bowl, whisk together the wet ingredients until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Coat an 8x8 inch baking dish with nonstick spray and spread the batter evenly.
  7. Sprinkle blueberries over the batter and gently push them down.
  8. Top with the streusel mixture.
  9. Bake for 40-45 minutes until golden brown and a toothpick comes out clean.
  10. Slice into eight pieces and serve.
