Instructions
- Preheat the oven to 350ºF.
- Combine the streusel topping ingredients in a small bowl until crumbly and set aside.
- In a large bowl, mix the dry ingredients for the coffee cake.
- In a separate bowl, whisk together the wet ingredients until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Coat an 8x8 inch baking dish with nonstick spray and spread the batter evenly.
- Sprinkle blueberries over the batter and gently push them down.
- Top with the streusel mixture.
- Bake for 40-45 minutes until golden brown and a toothpick comes out clean.
- Slice into eight pieces and serve.
