Ingredients

The cake

  • 2 cups all-purpose flour
  • teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1 cup granulated sugar
  • 1 large lemon zest
  • ½ cup unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup plain Greek yogurt
  • 1 cup blueberries

Streusel filling and topping

  • ¾ cup all-purpose flour
  • ¾ cup packed brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ cup cold unsalted butter

Instructions

  1. 1. Preheat the oven to 350°F and grease an 8-inch square baking pan.
  2. 2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. 3. In a small bowl, combine granulated sugar and lemon zest, then rub together until fragrant.
  4. 4. Cream together the butter and sugar mixture until fluffy, then add eggs one at a time, beating until smooth.
  5. 5. Mix in the vanilla extract and Greek yogurt until well combined.
  6. 6. Slowly add the dry ingredients and mix until just combined, then gently fold in the blueberries.
  7. 7. For the streusel, mix flour, brown sugar, and cinnamon in a medium bowl, then work in the butter until evenly distributed.
  8. 8. Pour half of the cake batter into the prepared pan, sprinkle with half of the streusel, then add the remaining batter and top with the remaining streusel.
  9. 9. Bake for about 45 minutes or until golden and a toothpick comes out clean.
  10. 10. Cool to room temperature, cut into squares, and serve.
