Instructions
- 1. Preheat the oven to 350°F and grease an 8-inch square baking pan.
- 2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- 3. In a small bowl, combine granulated sugar and lemon zest, then rub together until fragrant.
- 4. Cream together the butter and sugar mixture until fluffy, then add eggs one at a time, beating until smooth.
- 5. Mix in the vanilla extract and Greek yogurt until well combined.
- 6. Slowly add the dry ingredients and mix until just combined, then gently fold in the blueberries.
- 7. For the streusel, mix flour, brown sugar, and cinnamon in a medium bowl, then work in the butter until evenly distributed.
- 8. Pour half of the cake batter into the prepared pan, sprinkle with half of the streusel, then add the remaining batter and top with the remaining streusel.
- 9. Bake for about 45 minutes or until golden and a toothpick comes out clean.
- 10. Cool to room temperature, cut into squares, and serve.
