  • 4 tablespoons butter
  • 1 large lemon

Cake

  • 2 cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup sugar
  • 4 tablespoons butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 2 cups fresh or frozen blueberries

Instructions

  1. Preheat the oven to 375°F and grease the cake pan.
  2. Prepare the streusel by mixing sugar, flour, cinnamon, and salt, then adding lemon zest and butter until crumbly.
  3. In a bowl, mix flour, baking powder, and salt for the cake.
  4. In another bowl, combine sugar, butter, egg, vanilla, and remaining lemon zest.
  5. Alternate adding milk and the flour mixture to the sugar mixture, then fold in blueberries.
  6. Pour the batter into the prepared pan and sprinkle the streusel on top.
  7. Bake for 40 to 45 minutes until a toothpick comes out clean.
  8. Cool for 10 minutes, then drizzle with a glaze made from powdered sugar and lemon juice.
