Ingredients

The cake

  • 12 tablespoons unsalted butter
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 1 ¼ cups sour cream
  • 1 tablespoon vanilla
  • 2 ½ cups cake flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt

Cinnamon filling

  • 1 cup light brown sugar
  • 1 cup all-purpose flour
  • 1 ½ tablespoons ground cinnamon
  • ¼ teaspoon sea salt
  • 6 tablespoons unsalted butter

Streusel topping

  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • ¼ teaspoon sea salt
  • 1 tablespoon cinnamon
  • 6 tablespoons unsalted butter

Instructions

  1. Preheat the oven to 350°F and grease and flour a 10-inch tube pan.
  2. Cream the butter and granulated sugar together until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Mix in sour cream and vanilla until well combined.
  5. Sift together cake flour, baking powder, baking soda, and sea salt in a separate bowl.
  6. With the mixer on low, gradually add the flour mixture to the wet ingredients until just combined.
  7. In a small bowl, mix together the ingredients for the cinnamon filling.
  8. In another bowl, prepare the streusel topping by mixing the ingredients until crumbly.
  9. Spoon half of the batter into the prepared pan, spread evenly, and top with the cinnamon filling.
  10. Add the remaining batter on top and finish with the streusel topping.
  11. Bake for 50-60 minutes or until a cake tester comes out clean.
  12. Allow the cake to cool on a wire rack for 30-45 minutes before transferring to a serving platter.
