Ingredients

  • ½ cup milk

Crumb Topping

  • 4 tablespoons cold unsalted butter, sliced into cubes

Icing Glaze

  • ¼ cup powdered sweetener
  • ½ teaspoon vanilla extract
  • 1 teaspoon milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a muffin tin or line it with muffin/cupcake liners.
  3. In a large mixing bowl, combine the eggs, oil, Greek yogurt (or sour cream), and milk.
  4. In a separate bowl, mix the dry ingredients: flour, brown sweetener, cinnamon, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients and stir to combine, being careful not to overmix.
  6. Scoop 2½ tablespoons of batter into each muffin liner.
  7. For the crumb topping, mix cold butter, cinnamon, brown sweetener, and flour in a bowl until it forms crumbs.
  8. Sprinkle the crumb topping over the muffins.
  9. Bake for 20-25 minutes, checking around 17 minutes for doneness.
  10. Allow the muffins to cool for 10 minutes before transferring them to a wire rack.
  11. To make the icing, combine the icing ingredients in a small bowl and drizzle over the muffins.
