Instructions
- Preheat the oven to 350°F (175°C).
- Grease a muffin tin or line it with muffin/cupcake liners.
- In a large mixing bowl, combine the eggs, oil, Greek yogurt (or sour cream), and milk.
- In a separate bowl, mix the dry ingredients: flour, brown sweetener, cinnamon, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and stir to combine, being careful not to overmix.
- Scoop 2½ tablespoons of batter into each muffin liner.
- For the crumb topping, mix cold butter, cinnamon, brown sweetener, and flour in a bowl until it forms crumbs.
- Sprinkle the crumb topping over the muffins.
- Bake for 20-25 minutes, checking around 17 minutes for doneness.
- Allow the muffins to cool for 10 minutes before transferring them to a wire rack.
- To make the icing, combine the icing ingredients in a small bowl and drizzle over the muffins.
