The Streusel

Instructions
- Preheat the oven to 350 degrees and prepare muffin tin with liners.
- In a large bowl, combine flour, rolled oats, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, beat brown sugar and butter until fluffy, then add eggs one at a time and whisk in vanilla.
- In another bowl, whisk together Greek yogurt and milk.
- Add the flour mixture to the sugar mixture alternately with the yogurt mixture, starting and ending with the flour.
- Fold in the chopped dates.
- Spoon the batter into muffin liners, filling them ¾ full.
- In a small bowl, mix streusel ingredients and top each muffin with 1 tablespoon of the mixture.
- Bake for 16-22 minutes until a toothpick comes out clean, then cool for 10 minutes before removing from the pan.
