Instructions
- 1. Preheat the oven to 350°F.
- 2. Combine the flour, baking powder, and baking soda in a small bowl and set aside.
- 3. In another bowl, cream the butter, sour cream or yogurt, and vanilla. Whisk in the egg and then add the sugar, mixing until well combined.
- 4. Stir the flour mixture into the butter mixture until just moistened.
- 5. For the streusel, mix the brown sugar, flour, cinnamon, salt, and butter in a small bowl until coarse crumbs form.
- 6. Spoon the batter into buttered and floured jumbo muffin tins, filling each about ⅓ full. Add a heaping tablespoon of streusel on top, then cover with more batter until ¾ full and sprinkle more streusel on top.
- 7. Bake for 15+ minutes, depending on the size of your muffin tins.
