Ingredients

The muffins

  • scant 1 cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ stick butter, room temperature
  • ½ cup sour cream or plain yogurt
  • ½ cup granulated sugar
  • ½ teaspoon pure vanilla extract
  • 1 large egg

The streusel

  • ½ cup packed brown sugar
  • ½ cup flour
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ stick cold butter, cut into small pieces

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. Combine the flour, baking powder, and baking soda in a small bowl and set aside.
  3. 3. In another bowl, cream the butter, sour cream or yogurt, and vanilla. Whisk in the egg and then add the sugar, mixing until well combined.
  4. 4. Stir the flour mixture into the butter mixture until just moistened.
  5. 5. For the streusel, mix the brown sugar, flour, cinnamon, salt, and butter in a small bowl until coarse crumbs form.
  6. 6. Spoon the batter into buttered and floured jumbo muffin tins, filling each about ⅓ full. Add a heaping tablespoon of streusel on top, then cover with more batter until ¾ full and sprinkle more streusel on top.
  7. 7. Bake for 15+ minutes, depending on the size of your muffin tins.
