Ingredients

  • 2 cups white whole wheat flour
  • 1 cup regular oats
  • 1 cup coconut sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • teaspoons baking soda
  • ¼ teaspoon salt
  • 2 large eggs
  • cups plain Greek yogurt
  • cup coconut oil, melted
  • teaspoons vanilla extract
  • 1 cup grated carrots
  • ¾ cup raisins
  • ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F.
  2. Spray a muffin tin with cooking spray.
  3. In a large bowl, combine eggs, Greek yogurt, melted coconut oil, coconut sugar, vanilla extract, and grated carrots, mixing until combined.
  4. Add the flour, oats, cinnamon, nutmeg, ginger, baking soda, and salt, and mix until no dry patches remain.
  5. Fold in the raisins and chopped walnuts.
  6. Scoop the batter into the muffin tin, filling each cup ¾ full.
  7. Bake for 16-18 minutes.
  8. Remove from the oven and let cool before serving.
