Instructions
- Preheat the oven to 350°F.
- Spray a muffin tin with cooking spray.
- In a large bowl, combine eggs, Greek yogurt, melted coconut oil, coconut sugar, vanilla extract, and grated carrots, mixing until combined.
- Add the flour, oats, cinnamon, nutmeg, ginger, baking soda, and salt, and mix until no dry patches remain.
- Fold in the raisins and chopped walnuts.
- Scoop the batter into the muffin tin, filling each cup ¾ full.
- Bake for 16-18 minutes.
- Remove from the oven and let cool before serving.
