Healthy Carrot Muffins

Instructions
- Preheat the oven to 425°F and grease a muffin tin if necessary.
- In a large bowl, mix the dry ingredients: flour, baking powder, cinnamon, baking soda, salt, ginger, and nutmeg.
- In a small bowl, toss the raisins with a teaspoon of flour.
- Add the grated carrots, chopped walnuts, and floured raisins to the dry mixture and stir.
- In another bowl, whisk together the oil and maple syrup, then add the eggs, yogurt, and vanilla.
- Combine the wet and dry ingredients until just mixed, then fill the muffin cups evenly.
- Sprinkle turbinado sugar on top and bake for 13 to 16 minutes until golden and a toothpick comes out clean.
- Cool the muffins on a rack and store leftovers at room temperature or freeze.
