Healthy Carrot Muffins

Ingredients

  • 1 ¾ cups white whole wheat flour or regular whole wheat flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 2 cups peeled and grated carrots
  • ½ cup roughly chopped walnuts
  • ½ cup raisins (preferably golden)
  • cup melted coconut oil or extra-virgin olive oil
  • ½ cup maple syrup or honey
  • 2 large eggs
  • 1 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 tablespoon turbinado sugar (for sprinkling)

Instructions

  1. Preheat the oven to 425°F and grease a muffin tin if necessary.
  2. In a large bowl, mix the dry ingredients: flour, baking powder, cinnamon, baking soda, salt, ginger, and nutmeg.
  3. In a small bowl, toss the raisins with a teaspoon of flour.
  4. Add the grated carrots, chopped walnuts, and floured raisins to the dry mixture and stir.
  5. In another bowl, whisk together the oil and maple syrup, then add the eggs, yogurt, and vanilla.
  6. Combine the wet and dry ingredients until just mixed, then fill the muffin cups evenly.
  7. Sprinkle turbinado sugar on top and bake for 13 to 16 minutes until golden and a toothpick comes out clean.
  8. Cool the muffins on a rack and store leftovers at room temperature or freeze.
