Ingredients

The batter

  • 1 large egg
  • 1 cup unsweetened applesauce
  • cup sugar
  • 1 teaspoon vanilla extract
  • 4 tablespoons light butter, melted
  • 1 cup shredded carrots

The dry ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin with cooking spray.
  2. In a large bowl, mix the egg, applesauce, sugar, and vanilla until combined.
  3. Stir in the melted butter and shredded carrots until well mixed.
  4. In a separate bowl, combine the flour, baking soda, baking powder, cinnamon, salt, nutmeg, and cloves.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Spoon the batter into the prepared muffin tin and bake for 18-20 minutes.
