Instructions
- Preheat the oven to 350°F and prepare a baking sheet.
- In a bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- In a stand mixer, combine coconut oil and sugars, then add the egg and vanilla, mixing well.
- Incorporate the shredded carrots into the mixture.
- Gradually add the flour mixture until just combined, then stir in oats, coconut, and raisins.
- Drop tablespoonfuls of dough onto the baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes until slightly golden and set, then cool on wire racks.
- For the glaze, mix cream cheese, powdered sugar, milk, and vanilla until smooth, then drizzle over cooled cookies.
