Ingredients

The cookies

  • 1 cup white whole wheat flour

  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup shredded carrots
  • 1 cup old fashioned oats
  • ½ cup sweetened coconut flakes
  • ½ cup raisins

The cream cheese glaze

  • 1 ounce cream cheese (at room temperature)
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • ¼ teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet.
  2. In a bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a stand mixer, combine coconut oil and sugars, then add the egg and vanilla, mixing well.
  4. Incorporate the shredded carrots into the mixture.
  5. Gradually add the flour mixture until just combined, then stir in oats, coconut, and raisins.
  6. Drop tablespoonfuls of dough onto the baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes until slightly golden and set, then cool on wire racks.
  8. For the glaze, mix cream cheese, powdered sugar, milk, and vanilla until smooth, then drizzle over cooled cookies.
