Instructions
- Preheat the oven to 375°F and line two baking sheets with parchment paper.
- In a large bowl, whisk together the flour, baking powder, salt, and oats.
- Add the chopped walnuts and shredded carrots to the dry mixture.
- In a separate bowl, combine the maple syrup, melted coconut oil, and grated ginger.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Drop tablespoonfuls of the mixture onto the prepared baking sheets, leaving space between each cookie.
- Bake for 10 to 12 minutes until the cookies are golden on top and bottom.
