Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix the oats, oat flour, flaxseed, baking powder, cinnamon, ginger, nutmeg, and salt.
- Stir in the grated carrots, walnuts, and raisins.
- In a separate bowl, whisk together the honey, applesauce, coconut oil, and vanilla extract.
- Combine the wet and dry ingredients until just mixed; the dough will be thick and sticky.
- Scoop the dough onto the baking sheet, flattening each cookie slightly.
- Bake for 12 to 14 minutes until golden and firm at the edges.
- Let the cookies cool on the pan for 10 minutes before transferring them to a wire rack.
- For the icing, whisk together the powdered sugar, orange juice, and vanilla, then drizzle over the cooled cookies.
