Instructions
- Preheat the oven to 350°F and prepare a cookie sheet with parchment paper.
- Cook, mash, and cool the carrots.
- Cream together the butter, shortening, and sugar until fluffy, then add eggs, orange zest, orange juice, and vanilla.
- In another bowl, mix the dry ingredients and then combine with the wet mixture, adding cranberries last.
- Drop small dough balls onto the prepared cookie sheet and bake for 8 minutes.
- Let the cookies cool for a few minutes before transferring to a wire rack.
- Prepare the frosting by mixing powdered sugar, butter, orange juice, and vanilla, then frost the cooled cookies.
