Ingredients

The cake

  • cups all-purpose flour
  • 1 cup sugar
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vinegar
  • 1 tablespoon vanilla extract
  • 5 tablespoons oil
  • ½ cup water
  • ½ cup orange juice
  • 1 cup cranberries

The frosting

  • 1 cup cream cheese frosting

Instructions

  1. Preheat the oven to 180°C (350°F) and grease an 8-inch cake pan.
  2. In a large mixing bowl, combine the flour, sugar, baking soda, and salt.
  3. Add the vinegar, vanilla extract, oil, water, and orange juice to the dry ingredients and mix until combined.
  4. Fold in the cranberries gently.
  5. Transfer the batter to the greased cake pan.
  6. Bake for 25-27 minutes or until a skewer comes out mostly clean.
  7. Allow the cake to cool completely before frosting.
