Instructions
- 1. Preheat the oven to 170°C (350°F) and grease a 9" x 5" loaf pan.
- 2. In a bowl, whisk together the flour, salt, and baking powder.
- 3. In another bowl, beat the butter and sugar until creamy, then add the egg and almond extract.
- 4. Gradually mix in the dry ingredients until just combined, then add the sour cream and mix until smooth.
- 5. Gently fold in the frozen cranberries, reserving some for topping.
- 6. Pour the batter into the prepared loaf pan and sprinkle the reserved cranberries on top.
- 7. Bake for 1 hour or until golden brown and a toothpick comes out clean.
- 8. Allow the cake to cool in the pan for 15-20 minutes before transferring it to a cooling rack.
