Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • ½ cup unsalted butter
  • 1 cup caster sugar
  • 1 large egg
  • ½ teaspoon almond extract
  • ½ cup sour cream
  • 2 cups frozen cranberries

Instructions

  1. 1. Preheat the oven to 170°C (350°F) and grease a 9" x 5" loaf pan.
  2. 2. In a bowl, whisk together the flour, salt, and baking powder.
  3. 3. In another bowl, beat the butter and sugar until creamy, then add the egg and almond extract.
  4. 4. Gradually mix in the dry ingredients until just combined, then add the sour cream and mix until smooth.
  5. 5. Gently fold in the frozen cranberries, reserving some for topping.
  6. 6. Pour the batter into the prepared loaf pan and sprinkle the reserved cranberries on top.
  7. 7. Bake for 1 hour or until golden brown and a toothpick comes out clean.
  8. 8. Allow the cake to cool in the pan for 15-20 minutes before transferring it to a cooling rack.
