Cranberry Orange Biscuits

Ingredients

  • ¼ cup coconut flour
  • ¼ teaspoon celtic sea salt
  • ¼ teaspoon baking soda
  • ¼ cup palm shortening
  • ¼ cup coconut sugar
  • 3 large eggs
  • 1 tablespoon orange zest
  • ½ cup dried cranberries

Instructions

  1. Combine coconut flour, salt, and baking soda in a food processor.
  2. Pulse in the palm shortening, coconut sugar, eggs, and orange zest until mixed.
  3. Remove the blade from the processor and stir in cranberries by hand.
  4. Use a ¼ cup scoop to drop batter onto a parchment-lined baking sheet.
  5. Bake at 350°F for 15-18 minutes.
  6. Cool for 15 minutes before serving.
