Ingredients

  • ¼ cup coconut flour
  • ¼ teaspoon celtic sea salt
  • ¼ teaspoon baking soda
  • ¼ cup palm shortening
  • ¼ cup coconut sugar
  • 3 large eggs
  • 1 tablespoon orange zest
  • ½ cup dried cranberries

Instructions

  1. Combine coconut flour, salt, and baking soda in a food processor.
  2. Pulse in the palm shortening, coconut sugar, eggs, and orange zest until mixed.
  3. Remove the blade and stir in the dried cranberries by hand.
  4. Use a ¼ cup scoop to drop the batter onto a parchment-lined baking sheet.
  5. Bake in a preheated oven at 350°F for 15-18 minutes.
  6. Cool the biscuits for 15 minutes before serving.
