Ingredients

Dry Ingredients

  • cups white whole wheat flour
  • ½ cup coconut sugar
  • 1 teaspoon baking soda
  • teaspoon salt
  • 1 tablespoon orange zest
  • 1 cup fresh cranberries

Wet Ingredients

  • 2 large eggs
  • ¼ cup maple syrup
  • ¼ cup unsweetened almond milk
  • 1 cup unsweetened applesauce
  • ½ teaspoon orange extract
  • 2 tablespoons melted coconut oil

Instructions

  1. Preheat the oven to 350ºF and line a muffin tin with muffin liners, optionally spraying them with cooking spray.
  2. In a medium bowl, mix the dry ingredients together.
  3. In a large bowl, whisk the eggs and then add the maple syrup, almond milk, applesauce, and orange extract, mixing well.
  4. Combine the dry ingredients with the wet ingredients and mix until just combined. Then add the melted coconut oil and mix again.
  5. Fill each muffin liner about ¾ full and bake for 18-22 minutes until the center is fully cooked.
  6. Let the muffins cool for 5 minutes before removing them from the tin to cool completely.
