Instructions
- Preheat the oven to 350ºF and line a muffin tin with muffin liners, optionally spraying them with cooking spray.
- In a medium bowl, mix the dry ingredients together.
- In a large bowl, whisk the eggs and then add the maple syrup, almond milk, applesauce, and orange extract, mixing well.
- Combine the dry ingredients with the wet ingredients and mix until just combined. Then add the melted coconut oil and mix again.
- Fill each muffin liner about ¾ full and bake for 18-22 minutes until the center is fully cooked.
- Let the muffins cool for 5 minutes before removing them from the tin to cool completely.
