Ingredients

  • ¾ cup Dried Cranberries
  • 1 cup Hot Water
  • cup coconut oil, melted
  • cup honey
  • 2 large eggs
  • 1 tsp Vanilla extract
  • Zest of 1 Orange
  • Juice of 2 Oranges about ⅓ cup
  • cup Greek Yogurt, nonfat
  • ¼ cup Sugar
  • 1 cup All Purpose Flour
  • 1 cup Whole Wheat Flour
  • ¼ cup unsweetened vanilla almond milk
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • a pinch of salt

Instructions

  1. Preheat the oven to 375 degrees.
  2. Soak the dried cranberries in hot water to rehydrate them.
  3. In a large bowl, mix honey, eggs, vanilla, orange zest, orange juice, Greek yogurt, and sugar.
  4. Gradually add the flours, mixing in ½ cup at a time.
  5. Add baking soda, baking powder, and salt, then mix in the almond milk.
  6. Fold in the rehydrated cranberries.
  7. Bake for 14-16 minutes or until a toothpick comes out clean.
