Ingredients

The muffins

  • 1 tablespoon orange zest
  • ½ cup orange juice
  • ¼ cup granulated sugar
  • ½ cup milk
  • ¼ cup nonfat plain Greek yogurt
  • 1 cup all-purpose flour
  • 1 cup white whole wheat flour
  • teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • 2 large eggs
  • 6 tablespoons unsalted butter
  • ¼ cup honey
  • cups fresh or frozen cranberries

The orange glaze (optional)

  • ¾ cup powdered sugar
  • 1 tablespoon orange juice

Instructions

  1. Preheat the oven to 400°F and prepare a muffin pan.
  2. In a large bowl, mix granulated sugar and orange zest together.
  3. Juice the orange and combine it with milk and yogurt to create a liquid mixture.
  4. In another bowl, combine the dry ingredients: flours, baking powder, baking soda, cinnamon, and salt.
  5. In the liquid mixture, add eggs, melted butter, and honey; whisk until combined.
  6. Pour the wet ingredients into the dry ingredients and fold gently until just combined; add cranberries.
  7. Divide the batter into the muffin cups and bake for 20 to 22 minutes until golden.
  8. Cool the muffins and optionally drizzle with orange glaze made from powdered sugar and orange juice.
