Ingredients

Muffin Ingredients

  • 2 cups all-purpose flour
  • 1 Tbsp. baking powder
  • ½ tsp. salt
  • 1 large egg
  • 1 cup sugar
  • 1 tsp. finely grated orange zest
  • 1 tsp. vanilla extract
  • ¼ cup unsalted butter, melted
  • cups sour cream
  • ¾ cup dried cranberries
  • ½ cup chopped walnuts or pecans (optional)

Glaze Ingredients

  • ¾ cup sugar
  • 1 tsp. finely grated orange zest
  • ¼ cup orange juice

Instructions

  1. 1. Preheat the oven to 350°F and prepare a muffin pan.
  2. 2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. 3. In a large bowl, whisk the egg and then add sugar, mixing until thick.
  4. 4. Stir in orange zest, then whisk in vanilla and melted butter.
  5. 5. Add sour cream in two parts, mixing until just combined.
  6. 6. Fold in the flour mixture until just combined, then add cranberries and nuts.
  7. 7. Divide the batter into the muffin cups and bake for 20-23 minutes.
  8. 8. While baking, prepare the glaze by mixing sugar and orange zest, and simmering sugar with orange juice until syrupy.
  9. 9. Brush the muffins with the glaze and dip the tops in the orange sugar.
