Ingredients

Streusel (optional)

  • Tbsp brown sugar
  • Tbsp white sugar
  • tsp salt
  • 2 Tbsp butter, melted
  • 6 Tbsp all-purpose flour

Muffins

  • 2 cups flour
  • 1 cup white sugar
  • tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 4 Tbsp butter
  • 1 large egg
  • cups fresh cranberries
  • 1 large orange, zested and juiced
  • Butter and flour for coating muffin tin

Instructions

  1. Zest and juice the orange, setting aside the zest and juice.
  2. Preheat the oven to 350ºF.
  3. Mix the streusel ingredients in a small bowl and set aside.
  4. In a large bowl, combine the muffin dry ingredients.
  5. Add butter and orange zest to the dry ingredients and mix until crumbly.
  6. In a separate bowl, whisk the egg with the orange juice.
  7. Combine the wet and dry ingredients, stirring until just moistened.
  8. Fold in the cranberries gently.
  9. Prepare the muffin tin with butter and flour.
  10. Divide the batter among the muffin wells and top with streusel.
  11. Bake for about 30 minutes until golden brown and cool before removing.
