Instructions
- Zest and juice the orange, setting aside the zest and juice.
- Preheat the oven to 350ºF.
- Mix the streusel ingredients in a small bowl and set aside.
- In a large bowl, combine the muffin dry ingredients.
- Add butter and orange zest to the dry ingredients and mix until crumbly.
- In a separate bowl, whisk the egg with the orange juice.
- Combine the wet and dry ingredients, stirring until just moistened.
- Fold in the cranberries gently.
- Prepare the muffin tin with butter and flour.
- Divide the batter among the muffin wells and top with streusel.
- Bake for about 30 minutes until golden brown and cool before removing.
