Ingredients

The muffins

  • 2 cups all purpose flour
  • ¾ cup granulated sugar

  • ¼ teaspoon salt
  • cups buttermilk
  • ¼ cup butter, melted
  • teaspoons orange zest
  • 1 teaspoon vanilla extract

The streusel

  • cup granulated sugar
  • ¼ cup all purpose flour
  • ¼ teaspoon cinnamon
  • ¼ cup butter, cold, cut into small pieces

The glaze

  • 1 cup powdered sugar
  • tablespoons orange juice

Instructions

  1. Preheat the oven to 400°F and coat a muffin tin with cooking spray.
  2. Combine flour, sugar, baking powder, baking soda, and salt in a large bowl and make a well in the center.
  3. In another bowl, whisk together buttermilk, melted butter, orange zest, vanilla extract, and egg.
  4. Add the wet ingredients to the dry ingredients and mix until just combined, then fold in the cranberries.
  5. Spoon the batter into the muffin tins.
  6. For the streusel, mix sugar, flour, and cinnamon in a bowl, then cut in cold butter until crumbly.
  7. Sprinkle the streusel mixture over the muffins.
  8. Bake for 16-18 minutes until lightly browned, then cool on a wire rack.
  9. For the glaze, mix powdered sugar and orange juice, then drizzle over the muffins before serving.
