Instructions
- Preheat the oven to 400°F and coat a muffin tin with cooking spray.
- Combine flour, sugar, baking powder, baking soda, and salt in a large bowl and make a well in the center.
- In another bowl, whisk together buttermilk, melted butter, orange zest, vanilla extract, and egg.
- Add the wet ingredients to the dry ingredients and mix until just combined, then fold in the cranberries.
- Spoon the batter into the muffin tins.
- For the streusel, mix sugar, flour, and cinnamon in a bowl, then cut in cold butter until crumbly.
- Sprinkle the streusel mixture over the muffins.
