Ingredients

  • 2 cups gluten free 1:1 baking flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup cranberries
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ cup orange juice
  • cup melted coconut oil
  • 1 teaspoon grated orange zest

Instructions

  1. Preheat the oven to 400ºF and prepare a muffin tin with cupcake liners.
  2. In a large bowl, mix the gluten-free flour, sugar, baking powder, baking soda, orange zest, and salt.
  3. In a separate bowl, whisk together the egg, orange juice, melted coconut oil, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients, stirring until just moistened.
  5. Gently fold in the cranberries.
  6. Fill each muffin cup ¾ full with the batter.
  7. Bake for 15-20 minutes until the muffins are lightly browned.
  8. Remove from the oven and serve warm.
