Instructions
- Preheat the oven to 400ºF and prepare a muffin tin with cupcake liners.
- In a large bowl, mix the gluten-free flour, sugar, baking powder, baking soda, orange zest, and salt.
- In a separate bowl, whisk together the egg, orange juice, melted coconut oil, and vanilla extract.
- Combine the wet ingredients with the dry ingredients, stirring until just moistened.
- Gently fold in the cranberries.
- Fill each muffin cup ¾ full with the batter.
- Bake for 15-20 minutes until the muffins are lightly browned.
- Remove from the oven and serve warm.
